Carrot Cake (best)

preheat the oven to 180C
grease and line a 9-inch cake tin
130 g carrots
grate the carrots finely
150 g brown sugar
50 g sugar
160 g flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/4 tsp cloves
1/4 tsp star anise
mix the dry ingredients
120 ml oil
2 eggs
1 tsp vanilla
70 g apple sauce
mix the wet ingredients
add wet to dry and fold in
add grated carrots
Put into the cake tin
bake for about 1 hour
